Della Hyde Bar, Darlinghurst

It's good to see the iconic Exchange hotel on Oxford Street experience somewhat of a resurrection, even if it is just the downstairs bar. The first impression with the staircase, decor and jazz/swing music drifting throughout is that this will be another Sydney speakeasy style bar. However, apart from some touches here and there, the place feels more like cosy bar, softly lit and filled with music that is audible but not intrusive. The welcoming staff are attentive without being intrusive, which is a nice change from either being ignored or constantly interrupted.

Instead of just cramming the area with tables, Della Hyde has a much more relaxed and comfortable feel, making the most of the small space to create private areas to sit with friends. For the more social, there is a chance to hang at the long bar and chat. On the drinks side, a seasonal cocktail list is updated regularly: expect to see some creations that may not be to everyone's taste but still worth exploring (some tend to be a little too tart or sweet). Price-wise, they come in at the Sydney standard of $18 for the pleasure, but beers and a good selection of wine are on the menu, as is a decent choice of spirits.

There is no going past the fact this place has an intimate, low-key feel and is ideal for couples, dates or small groups of friends who just want to hang out away from small bar gangs that tend to over-run other venues. On top of all this, there is a reasonably priced food menu (or you can duck out for a cheap bite to eat on Oxford Street). Hopefully the venue will keep it's relaxed cosy vibe, and avoid the crowds that occur at venues like Frankie's Pizza. Giving it an 8/10 rating may accelerate this process, but it deserves it.

In brief: Della Hyde
Best things: Relaxed vibe, good comfortable layout and not too noisy even when busy
Don't miss: Seasonal cocktails, but choose carefully and tell the bar stuff what you like or dislike so they can help you decide.
Ideal for: Small groups, catch-ups with friends, dates
Date tip: Almost every part of this bar is ideal for dates, from the couch areas running along the walls, to the back corner and very discreet tables or the high chairs to the right of the bar.
Gripes: It would be nice to see hooks under the bar to hang bags and jackets. Also, resting ingredients destined for a cocktail on the top of bar is not a good look.
Rating: 8/10
